Karen Cardinal, General Manager

Karen started working at MB&G in the fall of 2010 as a part time server while attending Ramapo College & quickly fell in love with the industry. As time went on she found herself working through many different jobs at the restaurant – hosting, serving, bartending, expediting the kitchen and assistant managing at both Allendale & Mahwah Bar & Grills. She was promoted to General Manager in September of 2014 and couldn’t be happier with her career. She loves working with the Kunisch family & continues with their teachings each day.

Lou Cordero, Head Chef

Lou has always been passionate about cooking – He began his career in Fox Woods Casinos before working at AB&G as a line cook in July of 2000. After a couple years, he became Chef Pierre’s right hand man as Sous Chef. They collaborated as a team and escalated flavors to new heights. Lou was then promoted to Head Chef of MB&G in the early fall of 2015 where he thrives & continues to bring a fresh palate daily. Receiving positive feedback allows him to leave with a smile on his face after each shift.

Jack Collins, Head Bartender

Jack was born and raised in Mahwah and currently resides in Ramsey. He began his career at MB&G in April of 2012. He began his career with the MB&G as someone who helped with a little bit of everything, from barbacking, to running food, and hosting. His value was quickly recognized, however, he soon began bartending, rising to head bartender. His passion for his guests is insurmountable, and is a leader staff both behind and outside the bar. He has participated in many work events – including state mixology competitions. At the end of a shift, an ice cold IPA is his favorite to enjoy…especially when he picks which one we have on draft!

Miriam Darby, Assistant Manager

Miriam lives in Ramsey with her husband, Luke. She and Luke have always shared a love for the restaurant industry and started working together in 2011. Miriam graduated from Rockland Community College with a degree in hospitality/restaurant management. Consequently, she found comfort in the Mahwah Bar & Grill family built by the Kunisch’s. She began as a waitress and continued as a hostess, bartender and then as an assistant manager. She feels that the best part about the job is making each guest feel as though they have just been on a mini vacation, leaving full of good food and happy as a clam!
